ITA0039 by ASACERT took part yesterday, as a partner, in the fourth edition of “San Biaas e l’Ultim Tòch de Panetùn”, the event dedicated to promoting artisanal producers of traditional Milanese panettone, held on 3 February at the NYX Hotel Milan.
The initiative, promoted by the EcoDigital network together with Euro-Toques Italia and the Accademia del Lievito Madre del Panettone Italiano, under the patronage of the UniVerde Foundation, recorded a strong turnout and placed the celebration of Italian artisanal excellence at the heart of the evening—understood as a synthesis of quality, tradition, expertise, and respect for supply chains.
During the event, Achille Zoia and master baker Nicola Fiasconaro were honoured, recognised as Italian excellences and leading figures in signature panettone. The tribute highlighted professional paths rooted in authentic craftsmanship, capable of combining tradition with a contemporary vision.
ITA0039 by ASACERT supported the initiative in line with its mission to promote supply chain transparency and enhance Italian production through objective certification criteria, safeguarding the authenticity of Made in Italy.
During the event, Fabrizio Capaccioli, CEO of ASACERT and creator of the ITA0039 certification protocol, stated:

With the ITA0039 protocol, we aim to give value to what makes our supply chains unique: quality, safety, sustainability, and the central role of people.”
The panel also featured contributions from Alfonso Pecoraro Scanio, Enrico Derflingher, Alessandro Beduschi (Regional Minister for Agriculture, Food Sovereignty and Forests of Lombardy), Lorena Lo Presti (President of the Associazione Cuochi Meneghini – FIC), Manuel Urzì (COO of Startup Geeks and member of the EcoDigital Board), Andrea Navone (Founder of Accademia TV and Chef in Camicia), and Claudio Gatti, President of the Accademia del Lievito Madre del Panettone Italiano, who shared insights and reflections on quality, craftsmanship, and the enhancement of Italian agri-food supply chains.
The 2026 edition of San Biaas was also an important opportunity for cultural reflection, marking the centenary of the birth of Luigi Veronelli, a central figure in Italian food and wine criticism and a promoter of a model based on respect for producers and territories. A legacy that continues to inspire Italian cuisine, now recognised as an Intangible Cultural Heritage of Humanity by UNESCO.
The event confirmed how a culture of certification, combined with the protection of artisanal skills and territorial traditions, now represents a strategic lever for defending and promoting Italian agri-food identity worldwide.
